Today, Oct 4th, we celebrate the taco.
I'm particularly fond of tacos because A) I know how to make them, and B) the kids will eat them. That's a win-win.
Of course, there are lots of different ways to make tacos.... hard or soft shell, with chicken, beef, seafood or veggies... topped with cheese, guacamole, or salsa.
National Taco Day is Oct 4th... so yes, this year we're celebrating on a Monday, but just wait... in 2022, it'll be on Taco Tuesday!
And if you're a history buff, the first known reference to tacos dates back to 1520, when the conquistador Hernando Cortez wrote to King Charles V of Spain about the New World and referred to a meal the Aztec inhabitants had prepared with “tlaxcalli” or “tortilla.”
